CLASSIC FRIED GREEN TOMAOTES:

  • 2 egg whites, whipped slightly
  • 4-6 tablespoons canola or vegetable oil.
  • 1 cup self-rising white corn meal
  • 2 large (unripe) green tomatoes, rinsed & pat dry
  • Salt & fresh cracked pepper to taste
  1. Slice tomatoes 1/4 to 1/2-inch thick. Arrange sliced tomatoes in a single layer. Sprinkle both sides with salt and pepper. Set aside.
  2. Add egg whites to flat bottom dish with sides. Set aside.
  3. Add cornmeanl to flat bottom dish with sides. Set aside.
  4. Add one slice of seasoned tomato (at a time) into egg bath, coating entire slice of tomato. Immediately, coat tomato with cornmeal. Rest on plate.
  5. In 12-inch frying pan, over medium-heat, add oil. Heat oil for 3-4 minutes or until side of coated tomato sizzles when it touches oil. Do not add coated tomatoes to cold oil.
  6. Fry tomatoes 2-3 minutes on each side or until golden.
  7. Transfer fried tomatoes to plate...lined with paper towels.

Serve within 15 minutes. Keep warm into preheated 200 degrees F oven up to 1 hour.
