Khichudi is a popular wholesome one plate Indian meal made with rice and lentils as the main ingredients along with various veggies and infused with Indian spices. This is one dish that is popular among-st all cultures and ethnicity within India and also in the entire subcontinent. Swarnachur khichuri is a special Bengali khichuri prepared mainly as a bhog or offering to the Hindu dietes during religious occasions and is also served on special occasions. The rice used is Gobindo bhog, a fragrant raw rice and in addition to veggies, this khichudi also has paneer and dried fruits and nuts to enhance the taste. This dish has a vibrant golden colour as the word *Swarno* means gold.
Ingredients:
- Raisins - 20 gms
- Whole green chillies - 4-5
- Ghee - 1 tbsp
- Cauliflower florets - 10-12 pcs
- Cumin Seeds - 1 tsp
- Cardamoms - 3
- Red Chilli Powder - 1/2 tsp
- Garam Masala powder - 1/2 tsp
- Dry red chillies - 2
- Paneer - 100 gms
- Cinamon sticks - 1/2 inch
- Salt as per taste
- Cashewnuts - 20 gms
- Grated ginger - 1.5 tbsp
- Bay leaves - 2
- Mustard oil - 5-6 tbsp
- Gobindo bhog rice - 1 cup
- Potatoes - 2 medium size
- Sona moong dal - 1.5 cup
- Sugar - 2 tsp
- Turmeric Powder - 2 tsp
