Bengali Breakfast/ Tiffin Recipe

This is a traditional Bengali sooji/semolina preparation. Unlike the South Indian upma, here the sooji remains dry and flaky once done. It is a healthy dish and packed with nutrition as it blends the intrinsic qualities of sooji/semolina with a lot of veggies and tempered delicately with a spice mix. The art in cooking this dish is to add water to the roasted sooji and mildly sautéed veggies at the end until it is absorbed and then to keep repeating the process till the dish is properly cooked. Go ahead- try it and let us know how it went in the comments section below!
