Lemon rice is a very common rice dish in sounthern India.Very easy to prepare within few minutes with very few common ingredients.It has very crunchy,lemony and salty taste.
Ingredients:
- Bengal gram ( chana dal) -- 1 tsp
- Turmeric powder -- 1 tsp
- Cashew nuts -- 1 tbsp
- Salt to taste
- Long grain Rice/ Basmati rice/any regular rice (Cooked) -- 300gms
- Curry leaves - 1 strip
- Handful of chopped coroender leaves
- Roasted peanuts-- 2 tbsp
- Mustard seeds -- 1 tsp
- Urad dal -- 1 tsp
- Dried red chilli-- 2
- Chopped green chllies -- 1 tsp
- Lemon juice -- 2 tbsp
- Sugar 1 tbsp
- Refined oil -- 3-4 tbsp
Method:
- Heat the pan with 3 tbsp of oil.
- Add mustard seeds and let them crackle.Once it begins to cracle
- add 1 tsp of bengal gram
- 1 tsp of udad dal
- 2 tbsp of roasted peanuts
- Saute everything for few seconds.
- Now add 2 dried red chillies
- 2 tbsp cashew nuts
- Curry leaves
- Saute for few seconds.
- Now add steamed rice, 1 tsp of tumeric powder.
- Stir very gently
- Now add salt according to your taste.
- 1 tsp of sugar.
- Mix everything very gently.
- Now add 2 tbsp of lemon juice
- 1/2 tsp of chopped green chilli
- hndful of coriender leaves
- Mix well.Serve hot with coconut chutney/Raita/pickle.
