LONGHORN BALLS (Like A Reese's Peanut Butter Cup

Makes 24

In a large mixing bowl add...

  • 1-1/2 cups Peanut Butter, smooth
  • 2 cups confectioner's sugar
  • 1 teaspoon vanilla
  • 1/2 cup Butter, softened

Beat ingredients together until creamy. Cover and place in refrigerator for 1 hour or longer. Roll chilled mixture into 1-inch peanut butter balls then return to refrigerator for several hours.

Chocolate Covering

In heat resistant glass or stainless bowl add...

  • 1 -12 oz bag Chocolate Chips
  • 1 Tablespoon coconut or all-vegetable shortening

Place bowl over simmering water to allow the heat from steam to melt the chocolate and shortening together. Remove peanut butter candy balls from refrigerator. Using two forks, roll chilled peanut butter balls in melted chocolate until well coated. Tranfer to wax paper for chocolate to firm.

If chocolate begins to harden...place back over pan of steam.

Store "Longhorn Balls" in an airtight container up to one week in refrigerator.
