CHOCOLATE TRUFFLES:

  • 1/3 cup heavy whipping cream
  • 1/2 cup pecan, chopped
  • 2 Bars (8 oz.) High-Quality Chocolate
  • 6 tablespoon unsalted butter, cubed
  • 1/2 cup unsweetened cocoa powder
  1. Add cream to a small saucepan. Simmer over medium-low heat until tiny little bubbles form around the edge of cream.
  2. Slowly whisk in cubed butter; a few pieces at a time.
  3. When all the butter has almost melted; begin to whisk in a few pieces of chocolate until all the chocolate has melted.
  4. Pour chocolate mixture into a 9" by 9" pan. Cover with plastic wrap and refrigerate until firm; up to 2 hours or overnight.
  5. Roll truffle mixture, between hands, into 1-inch balls. Roll each ball into cocoa powder, toasted coconut, pecan, or a little of each. Your choice!!
