Today is Rose Monday. In some parts of Germany, the days are celebrated very much. Carnival is more of a celebration for children, which takes place on Shrove Tuesday. The children dress up and it is celebrated in the daycare. My little man will dress up as spiders and the little mouse will be a fairy. When I was a kid we went from house to house in the village in the afternoon and “begged”. Since I live here in Dresden, there has not been a child ringing at our door until Carnival, but it's still quite common in the village.

The end of the carnival season is also the beginning of Lent. Are you planning to fast? Last year I did not use refined sugar during Lent, and I will do that again this year. There is nothing allowed where sugar, cane sugar, glucose syrup, etc. are in it.

With the fast cravings in between it is not possible to grab chocolate or biscuits. When shopping I have to pay attention to which ingredients are processed. In most products – even if you do not expect it – there is a lot of sugar in it.

Since I believe that realistic goals should be set, “only” refined sugar and the artificial sugar syrups of the industry are taboo. You know how it is, if something is forbidden, you want it all the more. Therefore, it is always good to build a small way out. It is therefore allowed fructose (in the fruit) or sometimes something sweet with coconut sugar, honey or maple syrup – but in moderation or only in an emergency.

Last year I made the time pretty well. The first two weeks were a bit difficult, but then things went well. Let's see how it works this year.

A great snack for the sugar-free Lent, by the way, these delicious Energy balls made of dates, nuts and coconut oil. I will then just disappear in the kitchen and put on a good supply, so I get through the first days well;)

But now I come to the actual recipe. It is completely free of refined sugar. Only a little honey, can be found in the dressing, which you can also omit.

This paprika salad with tomato, cucumber and feta is a creation of Maik. During winter holidays he surprised us every day with a new salad. One of them was this delicious paprika salad. Maik was so nice and gave me the recipe and allowed me to share it with you.

Sometimes it is good when other people swing the cooking spoons. I guess I would not have come up with the idea to create a salad, with the pepper is the star. I like peppers, but so far only in the supporting role.

For this salad you first cut the onion and the garlic small. Since I'm not a fan of raw onion, Maik put the onions in balsamic vinegar (other vinegar works just as well). This ensures that the onion's sharpness is taken a little bit and tastes much better.

The peppers, tomatoes and cucumber are chopped and mixed. For the dressing, mix the onion-garlic-balsamic mixture with olive oil, mustard, honey, salt and pepper and mix with the salad. Crumbled (cow's milk) feta completes the salad perfectly.

This salad is great for preparing. Well-pulled the paprika salad tastes particularly delicious. Also freshly prepared, it is a great treat. If you omit the bread, you have a great low carb meal. The salad is very filling even without bread.

ingredients

  • 1 Red onion
  • 12 Garlic cloves (depending on size)
  • 3 Tablespoon of balsamic vinegar
  • 3 paprika
  • 78th Cherry tomatoes
  • 1.2 cucumber
  • 1.2 Pkg. Feta (shepherd's cheese)
  • 6 Tablespoon of olive oil
  • 1 TL mustard
  • 1 Teaspoon of honey
  • Salt pepper

preparation

  1. At the beginning you cut the onion and the garlic small cubes.
  2. Mix the onion and garlic cubes with the balsamic vinegar and let it steep for 10 minutes. (The balsamic vinegar draws some sharpness out of the onion.)
  3. Wash the peppers, cucumber and tomatoes and cut everything into cubes. Mix the vegetables in a bowl
  4. Crumble it with the feta.
  5. For the dressing you stir the olive oil, the mustard and honey with the onion-garlic-balsamic mixture. Then season with salt and pepper.
  6. Stir the dressing with the salad.
  7. Serve the salad immediately or let him pull the fridge a little more.
