Stuffed bread Pancakes

Ingredients:

  • 1 medium carrot Peeled and grated
  • 1/2 tsp mustard seeds
  • Salt to taste
  • Grated cheese 2-3 tbsp
  • 1/2 Cup shelled peas par boiled
  • 1 tsp Coriander powder
  • 4-5 tsp oil
  • 4 slices of bread
  • 1 Cup Bengal Gram flour
  • 2 tbsp finely chopped fresh green coriander
  • 2 large garlic cloves chopped
  • 1/2 tsp Cumin Seeds
  • 12-15 Curry Leaves
  • 1 large onion finely chopped
  • 2 green chillies chopped
  • 1" piece of ginger chopped
  • 2 medium sized potatoes boiled, Peeled and grated
  • 1 small capsicum finely chopped
  • 1/2 tsp garam masala
  • 1 1/2 tsp kashmiri Red chilli powder
  • 1/2 tsp turmeric power

Method:

  1. Make a thin paste of Bengal Gram flour, add 1/2 tsp Salt, 1/2 tsp Coriander powder, 1/4th tsp turmeric power, 1/4th tsp garam masala and 1 tsp kashmiri Red chilli powder. Mix well
  2. Grind together green chillies, ginger and garlic without using water. They should be coarsely ground.
  3. In a pan, take 3 tsp oil, Heat it and drop in Cumin and mustard seeds. Once they stop crackling, add the coarsely ground ginger, garlic and green chili masala saute for a minute.
  4. Add onion, saute till onion turn light pink, then add capsicum, peas and carrot. Add all powdered spices, mix well, cover and cook for 2-3 mins.
  5. Remove cover, add grated potatoes and fresh green coriander, mix well. Cover and cook again for further 2-3 mins.
  6. Remove cover, remove from heat and set aside to cool slightly. Meanwhile, place another non stick pan on heat and pour 1 tsp or less oil. Take a bread slice, dip in Besan batter on both sides, place on the pan. Let it turn golden brown on one side, flip and cook the other side. Similarly, do other bread Slices
  7. Once done, spread the cooked vegetable masala on to a bread piece, spread some grated cheese, place another bread pakoda on top, place it again on pan, and heat from both sides. Remove, cut into half, garnish with grated cheese, and serve hot with your choice of chutney, sauce, or, Mayonnaise.
