GERMAN PANCAKE W/ Homemade SYRUP

Preheat oven to 400 degrees F.

  • 1 cup all-purpose flour
  • 1 cup milk
  • 6 large eggs
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt

HOMEMADE SYRUP:

  • 1 tablespoon dark corn syrup or light corn syrup
  • 3/4 cup granulated sugar
  • 1/3 cup buttermilk
  • Fresh blueberries, optional
  • 1/2 teaspoon baking soda
  • 3-4 tablespoon confectioners' sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup butter, cuber
  1. Add 2 tablespoons of butter into a 13x9-inch baking pan. Melt in preheat oven just until butter has melted, about 1-2 minutes. Tilt dish until bottom and sides are well coated.
  2. Add eggs, milk, salt, and flour in a blended; process just until smooth. About 10-15 seconds.
  3. Add egg mixture into prepared baking dish. Bake, uncovered, until puffed and golden brown, about 20 minutes.
  4. Meanwhile, add remaining butter, granulated sugar, buttermilk, corn syrup and baking soda in a medium saucepan; bring to a boil. Whisk gently for 7 minutes. Remove from heat. Whisk in vanilla.
  5. Remove pancake from oven. Drizzle syrup over top.
  6. Sprinkle with powdered sugar and serve with blueberries, strawberries, raspberries, or whatever else you can think of.

TIP: BEST served while piping hot and puffy from the oven.
