RED VELVET PANCAKES - HOTCAKES

Who doesn't love a nice stack of pancakes in the morning! but they can get rather boring can't they. So lets mix things up a little and make my version of Red Velvet Pancakes! :)
Ingredients:
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1 cup icing/powdered sugar
- 2 tablespoons red food colouring
- Plus topping of your choice
- 1/2 teaspoon salt
- Extra icing sugar for topping
- 1 1/2 cups buttermilk
- 1/2 cup cocoa
- 1/2 teaspoon baking soda
- 2 cups flour
- 2 large eggs
