CORN FRITTERS | How to make perfect CORN FRITTERS Recipe

CORN FRITTERS:

  • 1 cup self-rising all-purpose flour
  • 1/3 cup Romano cheese, finely grated
  • 1/4 cup olive oil
  • 1/4 cup green onions (green part only), chopped
  • 1/2 teaspoon salt, optional
  • 1 egg
  • 1 cup self-rising yellow cornmeal
  • 1-1/2 cups buttermilk
  • 3 cups (divided) corn kernels, microwaved, boiled, or grilled.
  1. Combine cornmeal, flour, and salt in a large mixing bowl. Set aside.
  2. Whisk buttermilk and egg together. Add to cornmeal mixture. Whisk until dry and wet ingredients are just combine.
  3. Add Romano cheese, green onion, and 1-1/2 cups of corn to buttermilk mixture. Stir until well blended.
  4. In a 12" skillet, over medium to medium-high, add 1 teaspoon of oil. When skillet and oil are hot...spoon about 3 tablespoons of batter for each CORN FRITTER. Cook for 2 minutes, or until golden brown. Flip to other side and cook an additional 2 minutes, or until golden.
  5. Serve CORN FRITTERS with the additional CORN sprinkled on top!!

TIPS: Make the day before. Store in airtight container in refrigerator. Microwave 10 seconds at a time until warm.
