- 1 1/4 cups all-purpose flour

- 2 tablespoons vegetable/canola oil or butter
- 1 1/4 cups buttermilk
- 1 teaspoon vanilla extract
- Whish until pancake batter is lump free and smooth.
- In skillet over medium heat. Add a little oil to skillet...toss until oil is evenly coating skillet.
- Add 1/2 cup of pancake batter to skillet and cook on each side for 1-2 minutes or until golden brown.
- Keep pancakes in 170 F degree oven until ready to serve...no longer then 1 hour.
- Serve with butter and maple syrup or how ever you would like.
