Bengali Eggplant Fritters


Beguni is a pure Bong "telebhaja" or fritters. This is unique to our culture and is popular, especially during winter evenings as an evening snack with a hot cuppa tea or as a side with khichudi/ dal-rice mains. Veggie slices fried in a batter made of besan/gram flour and rice flour and seasoned with Indian spices makes for taste fritters which are commonly known in Bengal as *telebhaja*. Slice up some brinjals, whip up Begunis in a jiffy and enjoy the winter chill. Happy cooking!


  • Salt as per taste
  • Mustard Oil - 1/2 cup
  • Baking powder - 1/4 th tsp
  • Poppy seeds - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • Sugar - 1/4 th tsp (Optional)
  • Turmeric powder - 1/2 tsp
  • Egg plant (Cut in thin slices)- 1 pc
