Spicy Potato Capsicum

Ingredients:
- 1 tbsp ginger garlic paste
- 1 large onion finely chopped
- 1/3rd tsp turmeric power
- Salt to taste
- 1 large tomato finely chopped
- 1 large and 1 medium sized Capsicum washed, Peeled and cut into cubes
- 2 tbsp finely chopped fresh green coriander
- 1/2 tsp garam masala
- 1 tsp Cumin seeds
- 1 tsp kashmiri Red chilli powder
- 2 tsp Coriander powder
- 1/2 tsp Dried Mango Powder
- 2 medium sized potatoes, washed, Peeled and cut into cubes
- 1 1/2 tbsp mustard oil
- 1/4th tsp asafoetida
Method:
- In a wok, heat oil and add cumin seeds. Once they stop crackling, add onion and saute till translucent. Add ginger garlic paste, cook for a minute. Add potatoes, mix, cover and cook till onion are golden brown.
- Add kashmiri Red chilli powder, Turmeric Powder and coriander powder. Mix well and add tomatoes, salt and asafoetida. Mix, then cover and cook for further 3-4 mins.
- Add capsicum, 1 tbsp finely chopped fresh green coriander, Dried Mango Powder and garam masala. Mix, then cover and cook till capsicum is soft but crunchy.
- Plate out, garnish with rest of the finely chopped fresh green coriander, and serve with hot paranthis.
