Spicy Potato Capsicum

Ingredients:

  • 1 tbsp ginger garlic paste
  • 1 large onion finely chopped
  • 1/3rd tsp turmeric power
  • Salt to taste
  • 1 large tomato finely chopped
  • 1 large and 1 medium sized Capsicum washed, Peeled and cut into cubes
  • 2 tbsp finely chopped fresh green coriander
  • 1/2 tsp garam masala
  • 1 tsp Cumin seeds
  • 1 tsp kashmiri Red chilli powder
  • 2 tsp Coriander powder
  • 1/2 tsp Dried Mango Powder
  • 2 medium sized potatoes, washed, Peeled and cut into cubes
  • 1 1/2 tbsp mustard oil
  • 1/4th tsp asafoetida

Method:

  1. In a wok, heat oil and add cumin seeds. Once they stop crackling, add onion and saute till translucent. Add ginger garlic paste, cook for a minute. Add potatoes, mix, cover and cook till onion are golden brown.
  2. Add kashmiri Red chilli powder, Turmeric Powder and coriander powder. Mix well and add tomatoes, salt and asafoetida. Mix, then cover and cook for further 3-4 mins.
  3. Add capsicum, 1 tbsp finely chopped fresh green coriander, Dried Mango Powder and garam masala. Mix, then cover and cook till capsicum is soft but crunchy.
  4. Plate out, garnish with rest of the finely chopped fresh green coriander, and serve with hot paranthis.
