We are all enamoured by the spicy and rich fare served in roadside dhabas across Punjab. A signature dish of this fare is Dum Aloo and this is my take on the same, cooked at home. This is potatoes cooked in a thick gravy, tempered with a concoction of aromatic Indian spice, onion, ginger-garlic and fresh cream. Tastes divine, accompanied with any traditional Indian bread.

Ingredients:

  • Cashew nuts (broken)- 2 tbsp
  • Chopped ginger - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Kasauri methi crushed - 1/2 tsp
  • Kashmiri red chilli powder - 1 tsp
  • Garlic cloves - 4-5 cloves
  • 3 green chillies chopped
  • refined oil - 3-4 tbsp
  • Cumin seeds - 1 tsp
  • Cumin Powder - 1 tsp
  • Bay leaf - 1
  • Salt to taste
  • Sugar - 1 tsp
  • 1 Chopped onion
  • Baby potatoes - 350 gms
  • Fresh cream - 1 tbsp

Whole garam masala :-

  • Cloves- 3-4
  • Cinamon- 1/2 inch
  • Black pepper corns - 10-12
  • Cardamoms- 3-4
