Potato and green long beans

Ingredients:
- 1 medium sized onion finely chopped
- 1 1/2 tsp Coriander powder
- 1 large tomato finely chopped
- 1 tbsp crushed ginger and garlic
- 1/2 tsp Dried Mango Powder
- 2-3 green chillies finely chopped
- 2 medium sized potatoes washed Peeled and diced
- 1/4th tsp crushed red chilli powder (hot variety)
- 1/2 tsp garam masala
- 1/2 tsp kashmiri Red chilli powder
- 1/4th tsp asafoetida
- 1 tsp Cumin seeds
- Salt to taste
- 2 tbsp mustard oil
- 1/3rd tsp turmeric power
- 250 gms long green Beans chopped
Method:
- Heat oil in a wok. Add cumin seeds and asafoetida. Let them crackle. Drop in green chillies and saute for 10-15 secs
- Meanwhile, take all spices in a bowl except for Dried Mango Powder and garam masala, make a paste of it with the help of little water and add it to the green chillies. Stir fry on medium flame for half a min so the spices get cooked
- Add onion and cook till it becomes translucent and then add ginger garlic and saute till onion turns light brown
- Add tomatoes, mix, cover and cook till oil separates. Add potatoes, mix, cover and cook for 3-4 mins, stirring Occasionally. Add beans, mix again, cover and cook for 8-10 mins stirring Occasionally. After 8 mins, check if potatoes are done. If not, cook for further 2-3 mins, or till done. Add Dried Mango Powder and garam masala, mix, add 1 tbsp chopped fresh green coriander and cook on low flame for a minute or two.
- Remove from heat, transfer to a bowl, garnish with a tbsp of chopped fresh green coriander, and serve with chapati or paranthis.
