Potato and green long beans

Ingredients:

  • 1 medium sized onion finely chopped
  • 1 1/2 tsp Coriander powder
  • 1 large tomato finely chopped
  • 1 tbsp crushed ginger and garlic
  • 1/2 tsp Dried Mango Powder
  • 2-3 green chillies finely chopped
  • 2 medium sized potatoes washed Peeled and diced
  • 1/4th tsp crushed red chilli powder (hot variety)
  • 1/2 tsp garam masala
  • 1/2 tsp kashmiri Red chilli powder
  • 1/4th tsp asafoetida
  • 1 tsp Cumin seeds
  • Salt to taste
  • 2 tbsp mustard oil
  • 1/3rd tsp turmeric power
  • 250 gms long green Beans chopped

Method:

  1. Heat oil in a wok. Add cumin seeds and asafoetida. Let them crackle. Drop in green chillies and saute for 10-15 secs
  2. Meanwhile, take all spices in a bowl except for Dried Mango Powder and garam masala, make a paste of it with the help of little water and add it to the green chillies. Stir fry on medium flame for half a min so the spices get cooked
  3. Add onion and cook till it becomes translucent and then add ginger garlic and saute till onion turns light brown
  4. Add tomatoes, mix, cover and cook till oil separates. Add potatoes, mix, cover and cook for 3-4 mins, stirring Occasionally. Add beans, mix again, cover and cook for 8-10 mins stirring Occasionally. After 8 mins, check if potatoes are done. If not, cook for further 2-3 mins, or till done. Add Dried Mango Powder and garam masala, mix, add 1 tbsp chopped fresh green coriander and cook on low flame for a minute or two.
  5. Remove from heat, transfer to a bowl, garnish with a tbsp of chopped fresh green coriander, and serve with chapati or paranthis.
