FRENCH FRIES:

  • 2 1/2 LBS RUSSET Potatoes, peeled & rinsed
  • Fresh water
  • 3-4 cups Vegetable or Peanut oil
  • Kosher Salt
  1. Slice potatoes into 1/4-inch thick sticks. Add potatoes to a large bowl. Covered potatoes with fresh water. Soak for 20 minutes. Drain and pat dry with paper towels.
  2. Add oil to a large Dutch oven or heavy bottom pan, over medium-heat, until oil heats to 300 degrees F. For best result use a thermometer.
  3. Add a large hand-full of potatoes to preheated oil. Fry for three (3) minutes. Remove potatoes to a pan lined with paper towels. Cool completely.
  4. Preheat oil, over medium-high heat, to 400 degrees F. Add cooled precooked French Fries (a second time) to the hot oil. Fry one (1) or two (2) minutes until the fries are crispy and golden in color. Drain French Fries on paper towels.
  5. Season with kosher salt immediately after removing from oil.

Serve with ketchup, ranch dressing or your favorite dipping sauce.

TIPS: Keep FRENCH FRIES warm in a preheated 200 degrees F. oven for up to 15 minutes!!
