Broccoli potato souffle
Ingredients:
- 1 medium size broccoli - florets separated, stem peeled and cut into 1/2" pieces
- 1 tsp Black pepper powder
- 1/2 cup milk
- 1 tbsp refined flour
- Garlic paste - 1 tsp
- Salt to taste
- 2 tbsp butter
- 2 cheese slices
- 1 large potato - peeled and grated
- Baking powder - 2 tsp
- 1 tbsp grated cheese
- 1 medium onion - chopped finely
- Coconut milk (thick portion) - 2 tbsp + 2 tsp
Method:
- Blanch broccoli and potato, drain and keep aside
- In a non-stick pan, melt 1 tbsp butter and add refined flour to it.
- Add milk slowly while stirring continuously so no lumps are formed
- Add garlic paste, salt and half the pepper powder
- Keep on stirring till mixture is thick.
- Add grated cheese, stir till it melts, and add blanched broccoli potato mix and chopped onion
- While this is simmering, in a bowl, add coconut milk and baking powder
- Beat till mixed properly and smooth
- Add thus into broccoli white sauce mix and remove from flame
- With rest of the butter, grease baking tray and pour mixture in it.
- Cut strips if cheese slices and place on the mixture
- Preheat oven at 200°C, place on lower shelf, and bake for 45 mins
- Place on too shelf and bake for another 15 mins
- Remove and serve hot with garlic bread toasts
