Broccoli potato souffle

Ingredients:

  • 1 medium size broccoli - florets separated, stem peeled and cut into 1/2" pieces
  • 1 tsp Black pepper powder
  • 1/2 cup milk
  • 1 tbsp refined flour
  • Garlic paste - 1 tsp
  • Salt to taste
  • 2 tbsp butter
  • 2 cheese slices
  • 1 large potato - peeled and grated
  • Baking powder - 2 tsp
  • 1 tbsp grated cheese
  • 1 medium onion - chopped finely
  • Coconut milk (thick portion) - 2 tbsp + 2 tsp

Method:

  1. Blanch broccoli and potato, drain and keep aside
  2. In a non-stick pan, melt 1 tbsp butter and add refined flour to it.
  3. Add milk slowly while stirring continuously so no lumps are formed
  4. Add garlic paste, salt and half the pepper powder
  5. Keep on stirring till mixture is thick.
  6. Add grated cheese, stir till it melts, and add blanched broccoli potato mix and chopped onion
  7. While this is simmering, in a bowl, add coconut milk and baking powder
  8. Beat till mixed properly and smooth
  9. Add thus into broccoli white sauce mix and remove from flame
  10. With rest of the butter, grease baking tray and pour mixture in it.
  11. Cut strips if cheese slices and place on the mixture
  12. Preheat oven at 200°C, place on lower shelf, and bake for 45 mins
  13. Place on too shelf and bake for another 15 mins
  14. Remove and serve hot with garlic bread toasts
