Quinoa Chickpeas Salad | Super Healthy Quinoa salad with green yogurt and sprouts

Quick and easy recipe for quinoa salad and yogurt which is amazing in taste as well as healthy.

INGREDIENTS:

  • Quinoa or Daliya 1 cup

All mix veggies for your choice

  • Mint Leaves
  • Lemon
  • Spinach
  • Salt and Pepper
  • Garlic
  • Chilly
  • Curd/Yogurt 4-5 spoons
  • Mix herbs
  • Jeera powder
  • Chickpeas/chana 1 small cup
  • Coriander leaves

PROCEDURE:

For QUINOA:

  1. Take a cup of quinoa and soak it for 30-45 minutes
  2. After 30 minutes boil quinoa on high flame for 15 minutes
  3. (You can also use DALIYA as it is equally beneficial)

For VEGGIES and CHICKPEAS:

  1. Take a cup of chickpeas and soak it for 3-4 hours
  2. Boil it and keep it aside.
  3. (You can use any sprouts of your choice)
  4. Chop all veggies for your choice like peas, broccoli, carrot, beetroot, cauliflower, etc
  5. Wash all veggies and boil it on med to high flame for 15-20 minutes (Do not OVERCOOK the veggies)
  6. Chop some avocado (If available)

For YOGURT:

  1. Take some fresh corriander leaves, mint leaves, spinach, chilly and garlic in one mixer jar
  2. Add 4-5 spoons of yogurt
  3. Add salt and jeera powder and blend it well

For PLATING:

  1. Add some quinoa in serving bowl
  2. Add chickpeas
  3. Add all boiled veggies
  4. Add avocado
  5. Add yogurt
  6. Add some salt and pepper
  7. Sprinkle some mixed herbs
  8. Squeeze lemon (half)
  9. Mix everything well and finally garnish it with fresh coriander leaves on it.
