Here's a refreshing CHICKEN SALAD that I have been making for family and friends over the years. Freshly baked chicken, finely chopped celery, earthy black walnuts, a spritz of lemon and creamy mayo...makes it IRRESISTIBLE. Click on "show more" below for recipe...

CHICKEN SALAD

Makes 5 cups.

Preheat oven to 400 degrees F.

  • 3/4 cup mayonnaise
  • 1/2 teaspoon fresh cracked black pepper
  • 2 large chicken breast w/ rib (3 cups diced baked chicken)
  • 1/2 cup black walnuts, chopped
  • 1 teaspoon kosher salt
  • 1 cup celery, finely chopped
  • 1 lemon, fresh juice
  1. Season chicken breasts with salt and pepper. Bake in a preheated 400 degree F. oven for
  2. 40-45 minute or until golden brown.
  3. Once chicken breast are cooled remove chicken from bone. Dice chicken to equal 3 cups. Add to large bowl.
  4. Squeeze fresh lemon juice over chicken. Toss.
  5. Add celery, walnuts and mayo to chicken. Toss well.
  6. Add salt and pepper (if needed) to your liking and toss.
  7. Ready to eat or store in airtight container and refrigerate until ready to use!!!
