BEEF STEW

Preheat oven to 325 degrees F. Baking time 1 hour and 15-30 minutes.

Ingredients:

  • 1 garlic clove, peeled
  • 1/2 teaspoon fresh cracked pepper
  • 1 medium onion, peeled and sliced in wedges
  • 2 bay leaves, fresh or dried
  • 1/4 teaspoon thyme, dried
  • 1 lb. lean stew meat, cubed
  • 1-2 tablespoons canola oil
  • 1/4 celery salt
  • 1-2 cup beef broth
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 3 medium carrots, peeled, rinsed and cut
  • 3 medium potatoes, peeled, rinsed and sliced in quarters
  1. In large dutch oven or heavy sauce pan, over medium heat add oil.
  2. Toss beef with salt, pepper, celery salt, thyme and coat with flour. Add to dutch oven or heavy sauce pan and sear all sides of meat, 5-6 minutes, until golden brown.
  3. Add garlic clove, bay leaves, beef stock, potatoes, carrots and onions. Bring liquid to a boil. Cover with tight fitting lid and baked in a preheated 325 degree oven for 1 hour and 30 minute.
  4. Remove from oven (fish out bay leaves) and cool 10 minutes before serving.
