Roasted Mutton Curry

Ingredients:

  • 1 tsp Cumin seeds
  • 1/2 tsp crushed ginger garlic
  • 3 tbsp mustard oil
  • Salt to taste
  • 2 pinches of asafoetida
  • 2 green chillies chopped finely
  • 3 green cardamoms
  • 2 large onions chopped finely
  • 2 medium potatoes washed, Peeled and cut into cubes
  • 4-5 Cloves
  • 1" piece of cinnamon
  • 250 gms Mutton - washed properly
  • 1 Cup Yogurt

For Marination:

  • 1/2 tsp garam masala
  • 1/3 tsp turmeric power
  • 1 tsp Coriander powder
  • 1 - 1 1/2 tbsp chopped fresh green coriander
  • 1/2 tsp Cumin powder
  • 1 tsp kashmiri Red chilli powder
  • Salt to taste
  • 1 tbsp crushed ginger garlic

Method:

  1. Mix all marination Ingredients with the mutton cover, and Marinate for at least an hr in the refrigerator
  2. Heat 2 tbsp oil in a pan
  3. Drop in whole spices, once they stop spluttering, add onions and green chillies
  4. Fry onions for a min, add crushed ginger garlic, and stir fry till onions turn brown and get caramalised. Add asafoetida and mix
  5. Add mutton, mix well so all pieces are coated with onion, then let it stick to the pan so the masalas also get cooked, then turn over one by one to cook the other side similarly.
  6. Cook in similar way for 3-4 mins on low flame
  7. While this is getting roasted, place pressure cooker on the other side, add 1 tbsp mustard oil in it, and let it come to a smoking point
  8. Drop in Cumin Seeds, once they stop crackling, add potatoes and some salt
  9. Stir fry for a min then add the roasted mutton and mix well
  10. Add Yogurt and a Cup of water
  11. Close the lid, give 2 whistles, and let it cook in pressure on low flame for 12-15 mins
  12. Let it de-pressurise on its own, and then open the lid
  13. Transfer to a bowl, and serve with boiled/steamed rice
