OLD FASHIONED BEEF STEW RECIPE

Preheat oven to 350 degrees F.

  • 1 cup celery, cute into 1 inch pieces
  • 3 tablespoon all-purpose flour
  • 1/2 teaspoon fresh cracked pepper
  • 2 tablespoons canola oil
  • 2 carrots, peeled, cleaned and cute into 1-2 inch pieces
  • 1 1/2 cup beef stock
  • 1 cup tomato juice
  • 1 medium onion, diced
  • 4 medium potatoes, peeled, cleaned and sliced in half
  • 1/2 teaspoon kosher salt, optional
  • 1 LB. Stew Beef, cubed
  1. Combine meat, flour and pepper in bag...toss to coat.
  2. Add oil to Dutch oven or heavy sauce pan, over medium high heat, add seasoned beef and sear all sides. Remove meat from hot pan.
  3. Add to hot Dutch oven onions, tomato juice, beef stock, celery, carrots, potatoes, garlic cloves, bay leaves and seared beef cubes. Bring to a boil. Add tight fitting lid to Dutch oven.
  4. Place in oven and bake 50- 60 minutes or until beef and potatoes are tender.

Serve while warm. Beef Stew can be stored in airtight container for up to 3 day.
