HOMEMADE HAM

Ingredients:

curing mixture:

• 5tbsp brown sugar
• ½ c rock salt
• 1tbsp curing salt (pink salt)

sauce/poaching liquid:

• 2 bay leaf
• 2½ c brown sugar
• ½L pineapple juice

note: after you remove the ham into the sauce let it simmer more or you can add a slurry mixture to thicken the sauce.
