CHUCK ROAST with VEGETABLES

Preheat oven to 325 degrees. Total cooking time 3 hours and 15 minutes.

Ingredients:

  • 1 large onion, sliced and separated into rings
  • 1 teaspoon salt
  • 5 large carrots, peeled and cut
  • 2 large cloves garlic, peeled and sliced thinly
  • 1/3 cup vegetable oil
  • 4 large celery stems, rinsed and cut
  • 5-6 lb Chuck Roast
  • 1/4 cup all-purose flour
  • 1/2 teaspoon fresh cracked pepper
  • 5-6 medium potatoes, peeled, rinsed and cut in half

  1. Rinse and pat dry roast with paper towels. Make 4-5 small cuts in meat then add a thin slice of garlic in each, sprinkle with salt/pepper, lightly coat with flour.
  2. Heat oil in skillet on high heat. Add meat...sear until golden brown.
  3. Arrange half the sliced onion rings in a 13" by 9", or larger, baking pan lined with foil. Add the seared meat then top with remaining onion rings. Cover tightly and bake in preheated 325 degree oven for 2 hours and 15 minutes.
  4. Remove roast from oven and add prepared vegetables. Bake vegetables and meat together for 1 more hour.
  5. Allow chuck roast and vegetable to set for 10-15 minutes before serving.

TIPS: Use leftover roast to make soups or sandwiches.
