BEEF & BROCCOLI STIR-FRY:

  • 2 medium broccoli heads, cut into (4 cups) bite size pieces
  • 2 garlic clove, minced
  • 1 Tablespoon brown sugar
  • 1/2 cup soy sauce
  • 1 Tablespoons cornstarch
  • 1 medium onion, thinly sliced
  • 4 Tablespoons vegetable oil
  • 1 teaspoon fresh cracked black pepper
  • 2 Tablespoons lemon juice, freshly squeezed
  • 2 lb. top sirloin, sliced 1/4-inch thick
  • 2 teaspoons grated fresh gingerroot
  1. In a small bowl...combine soy sauce, lemon juice, cornstarch, brown sugar, garlic and pepper. Set aside.
  2. Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Add beef and stir-fry until almost cooked through, about 2 minutes. Transfer beef to a plate and cover to keep warm.
  3. Heat remaining 2 tablespoons of oil in skillet. Add sliced onions and stir-fry for 5 minutes. Add cut broccoli and 1/2 cup water. Bring to a boil, cover, reduce heat to medium and steam broccoli for 3 minutes.
  4. Return beef to skillet. Add soy sauce to broccoli & beef mixture. Add grated ginger. Bring to a boil and cook, stirring constantly, until soy sauce mixture thickens, about 2 minutes.
