SPICY & STICY BABY BACK RIBS

2 racks baby back ribs (about 2 1/2 pounds each)

Rinse ribs under cool running water, pat dry with paper towels & remove membrane from the underside of each rack

Place ribs on rimmed large cookie sheet lined with foil. Set aside.

DRY RUB:

  • 1 1/2 teaspoon ground fennel
  • 1 1/2 teaspoon paprika or sweet smoked paprika
  • 1-2 tablespoons kosher salt
  • 1 1/2 teaspoon cayenne pepper
  • 1 1/2 teaspoon dry mustard
  • 1 1/2 teaspoon freshly groung black pepper
  • 1/2 cup brown sugar

In a small bowl, combine sugar and seasonings well together. Sprinkle spice mixture all over ribs, pressing and patting it. Cover with foil and refrigerate overnight.

Preheat oven to 250 degrees F.

Remove ribs from refrigerator. Pour off any liquid on baking sheet, cover ribs with foil and roast for about 3 hours, until the meat is tender but not falling off the bone. Pour off any liquid on baking sheet.

BBQ SAUCE:

  • 1/2 cup beef broth
  • 1/2 cup ketchup
  • 1 small onion, minced
  • 1 teaspoon dried thyme
  • 1 tablespoons unsulfured molasses
  • 2 cloves of garlic, minced
  • 1 tablespoon unsalted butter
  • 1/2 cup cider vinegar
  • 2 tablespoons hot sauce
  • 2 tablespoons Worcestershire sauce

In small sauce pan, over medium low heat, melt butter. Add onion, garlic and thyme and cook until tender, about 5 minutes. Add other ingredients and bring to a boil. Reduce heat to simmer (low heat), stirring occasionally, until thickened, about 30 minutes.

Preheat broiler on high heat or grill on medium high heat.

Position rack about 10 inches from broiler. Brush ribs liberally with BBQ sauce and grill or broil 5 minutes on each side, until well-browned and crispy spots.

TIP FOR MAKING AHEAD...Roasted ribs and BBQ sauce can be refrigerated separately for up to 4 day. Return to room temperature and broil or grill before serving.
