Vanilla Cupcakes - all in one method

5 min express recipe! Easy All In One Cupcakes - Simple

Ingredients:

• 2 medium eggs
• 6oz sf flour (+ 0.5 tsp baking powder)
• 6oz sugar
• 4oz butter
• 1-2 tsp vanilla bean paste (or flavour of your choice)
• 80ml milk

Method:

Put in a large bowl - mix with electric whisk for 2 minutes - batter into paper cases - bake for 12-18 mins approx on 170 degrees c (160 fan assisted)

Tips - don't over whisk, 2-3 mins only & use a whisk attachment - it makes the mixture lighter by adding air and has a better texture this way

This recipe works well in a larger cake - use 7 inch pan. Makes 10 muffins/cupcakes or 15 fairy cakes approx.
