~Best Ever Corn Muffins Recipe ala Kenny Rogers~

Ingredients:

½ tsp baking soda
1 cup cream corn
½ tsp salt
1 stick (113g) softened butter, unsalted
⅓ cup skimmed milk
¾ cup cornmeal
1 cup milk + ½ tbsp vinegar
⅔ cup sugar
1 ½ cups all purpose flour
2 medium eggs
1 tsp baking powder

*This makes 12-15 of 3oz size muffins

*Bake in a preheated oven at 200C for 15 minutes
