Red velvet cupcakes - guaranteed amazing!!

Simple to make, pretty foolproof.

IMPORTANT - don't skimp on the food colouring & don't be too generous with the cocoa.

• 1/2 cup buttermilk
• 1/3 cup veg oil
• 1-2 teaspoons vanilla extract
• 1/4 cup weak coffee
• 1 cups plain/all-purpose flour
• 1 tablespoons cocoa powder
• 1 cups white sugar
• 1 eggs, room temperature
• 1-2 tubes red food colouring
• 1/2 teaspoon white distilled vinegar
