Ingredients:
- 2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups oat flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 4 ripe banana
- 1/2 cup coconut oil
- 1/3 cup honey
- 1 tsp vanilla
- 1/4 cup raisins
- 1/4 cup whole rolled oats
- 1/4 cup dairy free chocolate chips
Topping:
- whole rolled oats
- coconut sugar
*The chocolate chips were coated with the dry ingredient mixture to prevent them from sinking at the bottom of each muffins.
HOW TO MAKE YOUR OWN OAT FLOUR:
Grind some instant oats in a grinder or food processor until it resembles fine wheat flour. Measure the required amount and use it on the recipe.
