▼▼▼This is a fabulous buttercream recipe:
- 1-2 teaspoons extract or flavour
- 1/2 cup marg or butter (see tips)
- 2-3 cups icing sugar
- 1-2 tablespoons milk
Basically you just mix all the ingredients together in a large bowl starting with only 2 cups icing sugar then add more icing sugar as needed.
*I have used gel colour and disposable piping bags
TIPS/TRICKS
1. If using margarine not butter, you will use more icing sugar as there is water in the margarine. Note however that marg is easier to work with than butter because it's softer but butter will hold it's shape better once piped.
2. ALWAYS sift your icing sugar (a.k.a. confectioners sugar/powdered sugar)- icing sugar gets lumpy very easily and it will effect the end result - not as smooth
3. Use a good quality flavour or extract as poor tasting flavouring will effect the finished results taste
4. Use gel or paste colour rather than liquid. The colour will not be as vibrant and you will affect the overall consistency if you use liquid colour
5. If not using the buttercream right away, cover with clingfilm (plastic wrap) to prevent hardening
6. Use a good quality piping bag - you risk the bag splitting if you use poor quality ones. I order mine cheaply on amazon and they're inexpensive. You may find it easier to use if you order a larger size piping bag. I order 35cm or larger.
7. Piping is better with cold hands- warm hands can affect the consistency of the buttercream in the bag if you are piping lots of cupcakes.
8. Store decorated cupcakes in a cool environment (not the fridge). In a hot room, or next to the oven for example, your buttercream could melt.
