CALAMANSI MUFFINS | How to Make Soft and Fluffy Calamansi Muffins
Sobrang favorite ko ang recipe na 'to. This is actually my vanilla cupcake recipe and added calamansi and sobrang perfect niya. Ang sarap sa bibig ng texture niya soft and kakaiba yung pagka-airy niya, and yung refreshing flavor from the calamansi juice and zest sobrang panalo. Ang sarap na niya kainin magisa and masarap din i-partner sa kape. Hope you enjoy this recipe!
CALAMANSI MUFFINS:
- 3 eggs __ 21
- 1 cup sugar __ 12
- 1 stick (113g) softened butter, unsalted __ 25
- 1 ½ tsp baking powder __ 2
- ½ tsp baking soda __ 1
- ½ tsp salt
- 2 ½ tbsp calamansi juice (12pcs calamansi) __ 10
- ¾ cup milk __ 15
- 1 ½ cup all purpose flour __ 15
- Zest of 4 calamansi
Total = 101 pesos / makes 12 pieces yummy muffins
Bake at 180C for 20 minutes or until toothpick inserted at the center comes out clean
Notes :)
*You can add 1/4 to 1/2 cup more flour and 1/2 tsp more baking powder if you want them to rise well and crack. I just love mine on the wet side, moist and soft
*Zest is important! It really brings out the fresh calamansi flavor, very great combo with coffee or tea!
You can also use lime or lemon, just use the same amount of juice and zest according to your liking
*This recipe makes 12pcs
*You may want to consider greasing the top surface of the muffin tin so they won't stick on the surface once they spread over the top during baking
*Zest your calamansi before juicing them :)
