Brownie on the bottom/Peanut Butter Cheesecake on top baked in paper-lined muffin cups. A perfect double dessert in every bite!! Great for traveling, get togethers, potlucks, or whatever else you can think of. Recipe below...
BROWNIE PEANUT BUTTER CHEESECAKE BITES
Preheat oven to 350 degrees F.
Paper-line 12-20 muffin cups (like cupcakes)
- 1/2 teaspoon pure vanilla extract
- 1 egg
- 1/4 cup peanut butter
- 1 pkg. (18 to 20 oz.) brownie mix
- 1/4 cup walnuts, chopped
- 1 pkg. (8 oz.) Cream Cheese, softened
- 1/3 cup sugar
- Prepare brownie batter as directed on package.
- Spoon batter into paper-lined muffin cup until half way full.
- Beat together cream cheese, sugar, egg, peanut butter, and vanilla until light a fluffy. About 2 minutes.
- Spoon 1 round tablespoon on top of each brownie batter cup. Slightly press into brownie batter. Top with chopped nuts, optional.
- Bake 30 minutes, or until toothpick inserted into center comes out clean.
- Cool completely. Serve with ice-cream, whipped cream, chocolate/cameral drizzle, fruit, and whatever else you can think of.
TIPS: Store Brownie Peanut Butter Cheesecake Bites in an airtight container up to 3 days on the counter top, 1 week in the refrigerator, or up to 3 months in the freeze.
