~Red Velvet Cupcake with Cream cheese Frosting Recipe~
Ingredients:
- 1 1/4 cup all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 3 tbsp sifted cocoa powder, unsweetened
- 1 tsp vanilla
- Red gel food color (as to desired red color)
- 1 cup milk
- 1 stick (113g) softened butter, unsalted
- 1 cup sugar
- 1 tbsp vinegar
- 1 egg
Frosting:
- 1 1/2 cups powdered sugar, sifted
- 1 block 250g cream cheese, softened
- 1/4 cup (or 1/2 stick) softened butter, unsalted
- 1 tsp vanilla
Bake at 180C for 20 minutes or until they spring back when pressed or a skewer inserted at the center comes out clean.
Chill the cream cheese frosting before using on completely cooled cupcakes.
You can double the amount of powdered sugar if you want to make the frosting stiffer.
