TRIPLE GINGER COOKIES

Preheat oven to 350 degrees F.

• 1/4 teaspoon baking soda
• 1/2 cup packed light brown sugar
• 1 eggs
• 1/2 teaspoon ground ginger
• 2 cookie sheets. Set aside.
• 1/2 teaspoon baking powder
• 2 tablespoon molasses
• 1/4 teaspoon salt
• 1/2 cup butter, softened
• 2-1/4 cups all-purpose flour
• 1/2 teaspoon grated fresh ginger root

ICING:

• 3-4 tablespoons crystallized ginger, finely chopped
• 1/2 cup powdered sugar
• 2-3 teaspoons water

1. Add first 5 ingredients in a medium mixing bowl. Whisk well. Set aside.
2. In a large mixing bowl; beat together butter and brown sugar until light and fluffy. Beat in egg, molasses, and fresh ginger.
3. Add 1/3 of dry ingredients to butter mixture. Beat well. Add another 1/3 of dry ingredients. Beat well. Beat in remaining flour mixture. Dough will be thick.
4. Shape tablespoonfuls of dough into balls (if dough is too sticky refrigerate for 30-40 minutes); place 1-inch apart on non-greased baking sheets.
5. Bake for 12-14 minutes or until edges begin to brown slightly.
6. Cool cookies completely on wire racks.
7. For icing; whisk powdered sugar with enough water to reach desired consistency.

Drizzle over each cookie; top with crystallized ginger.

TIPS: Store in an airtight container up to 3 days.
