Deronda demonstrates how to make TWISTED SOFT PRETZELS!! She'll also show you the trick to the twist in PRETZELS!! The shape of pretzels, according to the History Science and Technology, were created by an Italian monk that crossed the dough into a shape resembling a child crossing its arms in prayer!! SOFT PRETZELS:
- 1 tablespoon yeast
- 1 teaspoon sugar
- 2 teaspoon salt
- 5 cups all-purpose flour
- 1- 1/2 cups lukewarm water
- 3 tablespoons butter, melted for brushing tops of baked Pretzels
- 1/2 cup warm milk
BAKING SODA BATH:
- 4 cups HOT tap water
- 4 teaspoons baking soda
- Combine the warm water and yeast. Whisk. Set aside.
- Combine flour, salt, and sugar. Whisk. Set aside.
- In a large Kitchen Aid bowl; add dissolved yeast mixture, warm milk, and flour mixture. Using the Kitchen Aid dough hook combine ingredients on medium speed (occasionally scraping down sides of bowl) until dough is no longer sticky, about 10 minutes. TIP - Dough may also be kneaded on a floured surface for 10 minutes.
- Place dough into a lightly greased large bowl. Cover with a slightly damp towel. Let dough rise for 1 hour in a draft free/warm area until double in side.
- Punch down the dough. Divide into 10 equal pieces. Take each piece and roll into a long, 2 to 3 foot, rope.
- Shape each rope into a pretzel. Immediately, dip into the warm soda water. Dry, both sides of pretzel, on paper towels. Place on lightly greased cookie sheets and shape into pretzel. Let rise for an additional 15 minutes.
- Add coarse salt to top of pretzels before baking. Omit salt if making sugar/cinnamon pretzels. Sugar/cinnamon mixture below in TIPS.
- Bake pretzels in a preheated 500 degrees F. oven for 10-14 minutes or until golden in color.
- Immediately, brush baked pretzels with melted butter.
TIPS: For a sugar/cinnamon pretzel...Mix 1 tablespoon sugar to 1/2 teaspoon of cinnamon for every 3 pretzels. Add as much or as little sugar/cinnamon as you wish to each pretzel. Sprinkle sugar/cinnamon topping on after brushing baked pretzels with butter.
