Soft and chewy with a bit of a crunch type of chocolate chip cookies! This chocolate chip cookie recipe remains soft for days with balanced sweetness and added flavor of bittersweet chocolate chunks. You can also use semi-sweet chocolate chips as you like!
Ingredients:
- ½ cup white sugar
- 1 ½ tsp salt
- ½ cup brown sugar
- ½ cup light brown sugar
- 2 eggs
- 1 cup (225g) unsalted butter, melted and cooled
- 2 tsp vanilla
- 1 tsp baking soda
- 2 cups (300g) bittersweet chocolate chunks or chips
- 2 ¼ cup all purpose flour
- ¼ cup cornstarch
*You can also use semi-sweet chocolate chips
*You can also use 1 cup of either light brown or dark brown sugar (instead of half of each) as preferred. These sugars were combined equally in the recipe just to balance out the flavor, color and added moisture from the molasses so it's not light nor heavy.
*You can chill the mixture for 30 minutes or just leave it at room temperature for 1-2 hours to set before baking. However, chilling overnight develops the flavors together and makes more flavorful cookies.
*Bake them in a preheated oven at 180C for 12-15 minutes for medium sized scoop and 8-10 minutes for small sized scoops or just until edges turn golden brown. Baking time may also vary depending on your oven. Some ovens cook faster with very even heat distribution.
*This recipe makes 22 large cookies (or 65pcs small cookies)
