PUMPKIN SCONES

Preheat oven to 400 degrees F.

  • 2/3 cup 100% Pure Pumpkin
  • 1/2 cup chilled butter, cut into cubes
  • 1 tablespoon baking powder
  • 2 cups all-purpose flour
  • 3/4 cup milk, substitute with Half & Half, or cream
  • Milk, Sugar, and Cinnamon for tops of Scones, optional
  • 1/3 cup sugar
  • 1 teaspoon pumpkin pie spice, or substitute with 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg
  1. In a large bowl; add flour, sugar, baking powder, and pumpkin pie spice. Whisk well.
  2. Add chilled butter cubes to flour mixture, Cut butter into flour mixture with pastry tool, or using to butter knifes.
  3. In a small bowl; combine milk and pumpkin. Whisk well.
  4. Using back of hand make a well in the middle of flour mixture. Add pumpkin mixture. Using a fork slowly mix dry ingredients into wet ingredients. DO NOT over mix.
  5. Add scone dough to a floured surface. Pat into a 8-inch square.
  6. Using a floured chef's knife cut into 4 equal squares. Flour knife between cuttings. Cut each square into 4 triangles. Place onto non greased baking sheet.
  7. Lightly brush tops of each scone with milk. Sprinkle with sugar, and/or cinnamon, optional.
  8. Bake for 20-25 minutes. Cool.

TIPS: Keep in airtight container for up to 2 days, or freeze up to 3 months!!
