Basic POPOVERS

Preheat oven to 375 degrees F.

Use a popover tin, or 12-cup muffin pan.

  • 1 cup whole milk, room temperature
  • 1/2 teaspoon salt
  • 3 whole eggs, room temperature
  • 1 cup all-purpose flour
  • 2 tablespoons vegetable oil
  1. Add 1 teaspoon of oil into the bottom of each popover tin, or 1/2 teaspoon of oil into the bottom of each muffin pan. Place popover pan on cookie sheet. Heat in oven while preparing POPOVER batter (about 10 minutes).
  2. In a large mixing bowl...whisk together the eggs and milk for 1 (one) minute. Add flour and salt. Whisk an additional 2 (two) minutes until smooth and no lumps are present in batter. Batter should run smoothly off the back of a stainless steel spoon.
  3. Transfer batter into a easy to pour container with spout (like a 2-cup measuring cup).
  4. Carefully remove heated popover pan from oven. Immediately pour batter 1/2 (half) way up in each muffins tin.
  5. Return back to oven and bake for 25-35 minutes of until POPOVERS are golden in color.
