SNOWBALL PECAN COOKIES!! Taste like a combination of shortbread and sugar cookies!! Easy to make!! Excellent for a homemade Christmas gift!! Recipe below...

PECAN "SNOWBALL" COOKIES

(Makes 28 cookies)

Preheat oven to 350 degrees F.

  • 2-1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cups pecan, finely chopped
  • 1 teaspoon pure vanilla extra
  • 1/2 cup powdered sugar plus extra for dunking cookies
  1. In a large bowl, beat butter until creamy. Beat in powdered sugar and vanilla until light and fluffy. Gradually beat in flour and salt until well blended. Stir in pecans.
  2. Refrigerate 30 minutes or up to 1 hour if dough is sticking to sides of bowl.
  3. Roll dough into 1-inch balls and place on parchment paper lined or slight buttered baking sheets.
  4. Bake for 10-14 minutes or until slightly golden around bottom edges.
  5. Cool cookies for 10-15 minutes. Roll warm cookies in additional powdered sugar. Let cool complete on wire racks. Sprinkle with additional powdered sugar, if desired.

TIPS: Store completely cooled cookies in an airtight containers, in a single layer, up to 2 days.
