Super Simple Coconut Cookie Recipe - Chewy and Delicious!
▼YOU WILL NEED▼:
- 100g white sugar
- 100g brown sugar (light brown or golden work well)
- 100g desiccated coconut (not to be confused with sweetened shredded coconut)
- 50g/100g chocolate
- 110g salted butter (or unsalted plus add a pinch of salt)
- 1 egg
- 150g plain flour
- 1/2 teaspoon bicarbonate of soda
▼METHOD▼:
- Mix butter and sugar until fluffy
- Add egg and mix
- Add vanilla and mix
- Add flour and mix
- Add coconut

If you want thicker cookies that don't spread as much, place the cookie balls in the fridge for 20 minutes before baking.
With the cookies in this video, the just coconut cookies baked first and the mixture was still soft so they spread more. The chocolate version were in a cool area of the kitchen for 30 minutes whilst the first batch booked and cooled. They did not spread as much and were thicker because of their cooler temperature when they were placed in the oven.
