RUM LOG COOKIES RECIPE

Preheat over to 325 degrees F

  • 1/2 cup confectioners' sugar
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon vanilla
  • 1/2 cup shortening
  • 1/2 teaspoon salt
  • 1 cup oaks, quick cooking
  • 1 teaspoon rum, flavoring
  • 1/2 cup walnuts, finely chopped
  • 1 teaspoon coconut oil, optional
  • 1 cup (6 ounces) semisweet chocolate
  • 1/2 cup butter, softened
  1. In a medium mixing bowl, cream together butter, shortening and sugar until light and fluffy. Beat in vanilla and rum flavorings. Combine the flour, oats, and salt; add to creamed mixture and mix well.
  2. On a lightly surface, shape dough into 1/2-inch wide logs. Cut into 2-inch pieces. Place on an ungreased baking sheets. Bake for 15-18 minutes or until cookies are set and very light brown. Remove to wire racks to cool.
  3. In microwave or double boiler, melt chocolate and coconut oil until smooth. Dip each cookie into chocolate, allow excess to drip off. Sprinkle with finely chopped walnuts. Place on wax paper to set.
  4. Store in airtight container up to 4 days. Freeze well wrapped cookies up to 2 months.
