Peanut Butter Cookies with a Chocolate kiss

Preheat oven to 375 degrees.

In a large mixing bowl cream together...

• 1/2 cup all-vegetable shortening
• 1/3 cup light brown sugar
• 1/3 cup granulated sugar

Add...

• 3/4 cup creamy peanut butter
• 1 teaspoon vanilla
• 1 egg

Beat until well blended. Add...

• 1 1/2 cups of all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt

Mix well. Cookie batter will be thick. Roll dough into balls. Coat dough balls in gradulated sugar and place on cookies sheet.

Bake 8-10 minute. Remove for oven and immediately add a chocolate kiss to the top of each cookie before transferring to cooling rack.

Makes 2 dozen

Tip: To soften chocolate kiss place cookie in a 200 degree oven for 2-3 minutes or until softened.
