BLUEBERRY BISCUITS W/ LEMON GLAZE
(Makes 12)
Preheat oven to 400 degrees F.
Lightly grease or line a large cookie sheet with parchment paper
- 1/2 teaspoon baking soda
- 3/4 cup whole buttermilk
- 2 teaspoon baking powder
- 1 large egg at room temperature
- 2 cups all-purpose flour
- 1 cup fresh or frozen blueberries
- 1/2 cup sugar
- 1/4 cup butter, melted
- 1/4 teaspoon salt
GLAZE:
- 1/2 cup powdered sugar
- 1 tablespoon fresh lemon juice
- In a large bowl add the flour, baking powder, baking soda, and sugar. Whisk well. Set aside.
- In a medium bowl add the buttermilk, egg, and melted butter. Whisk well. Add to flour mixture; stir just until moistened. Gently fold in blueberries.
- Drop by 1/3 cupfuls onto prepared cookie sheet 1-inch apart.
- Bake on the middle rack of oven for 15-18 minutes, or until golden in color. Cool slightly.
- In a small bowl, combine powdered sugar and lemon juice. Drizzle over biscuits.
