CRUST
Preheat oven to 375 degrees F.
In small mixing bowl, add...
- 1 1/2 cups cinnamon graham cracker crumbs
- 3 Tbsp. sugar
- 6-8 Tbsp. butter, melted
Mix well with fork. Press in bottom of 9-in spring for pan or regular baking pan. Bake 7 minutes. Cool completely. Set aside.
Filling
In large mixing bowl. Add...
- 3 Tbsp. sugar
- 2 teaspoons vanilla extract
- 2 cups heavy whipping cream.
- 2 pkg. (8 oz. each) cream cheese, softened
- 2 Tbsp. lemon juice, fresh is best
TOPPING:
- 3-4 cups of fresh Berries (I used strawberries, blueberries & red raspberries)
Beat cream cheese, sugar and lemon juice until smooth. Slowly add cream; beat until stiff peaks form, 3-4 minutes. Pour over cooled crust. Refrigerate, covered, 4 hour or overnight.
With a knife, loosen sides of cheesecake from pan (if using springform) remove rim.
Top with your favorite berries and serve immediately!!
