RICOTTA CHEESECAKE

Preheat oven to 325 degrees F.

8" or 9" springform pan. Lighly grease with a coating of breadcrumbs .

  • 2-3 tablespoon of plain breadcrumbs (for coating springform pan)
  • 3/4 cup sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 4 cups or 2 (16 ounce container) Ricotta Cheese
  • 1 teaspoon pure vanilla extract
  • 4 eggs
  1. In a large mixing bowl add ricotta cheese and sugar. Using a hand mixer, on medium-speed, beat ingredients until smooth.
  2. Add 1 (one) egg at a time. Beating 10 seconds in between each egg.
  3. Add vanilla, flour, and salt. Beat until smooth.
  4. Pour Ricotta cheesecake batter to prepared springform pan.
  5. Bake 1 hour 15 minutes, or 1 hour 30 minutes, or until middle giggles when slightly shaken.
  6. Cool for 1 hour. Cover Ricotta Cheesecake, and refrigerate overnight.

TIPS: Serve with fresh fruit, whipped cream, or eat plain!!
