Cheesecakes are very luxurious dessert and many thinks it's a complicated process when it comes to making them at home. They are usually baked using a spring form round pan using baine marie method, or simply with a water bath. But this version made everything simple! I tried making a 'mini' and 'super mini' bite size pieces so that more people could enjoy it. It's very convenient to prepare, to carry and to eat! You can also give them as a treat to your friends and loved ones still looking beautiful and perfect. This recipe is very creamy and rich with just the right sweetness. A perfect balance of the creamy cheesecake, graham crust and fruity blueberry topping!

Ingredients:

CRUST:

  • 1/2 cup (1 stick) melted butter
  • 3 tablespoons sugar
  • 2 cups crushed graham

CHEESECAKE BATTER:

  • 2 large eggs
  • 1 tsp vanilla
  • 1 cup heavy cream
  • 2 bars of 250 grams cream cheese
  • 1 cup sugar
  • 1/2 tsp salt

TOPPING:

  • 1 can 21 oz Blueberry pie filling and topping
