Easy Oreo Cheesecake - no bake

This is a really simple Oreo cheesecake recipe. (You can use other similar biscuits in place of Oreo's)
You will need:
- 1/2 pack (75g) oreos
- 50g chocolate - optional
- 300g cream cheese
- 1 teaspoon vanilla
- 125g (+/- 20g) margerine or butter
- 50g (or more to taste) either caster sugar (super fine) or icing sugar
- 9/10 inch pan
- 250ml double cream (aka heavy cream) or whipping cream
- 275g (approx) biscuits
Tips: make this cheesecake a day before you need it so you have time for it to set, plus it tastes better the next day.
This is a rich cheese cake and you can give quite small slices (it'd delicious served with vanilla icecream). If you have smaller slices, this recipe will serve 12-14. If you want it lighter, add about 100ml more cream and mix with cream cheese for longer. You may also wish to reduce the base, you can have a thinner base but reducing the ingredients by 20%.
You can freeze this cheesecake - defrost in the fridge for 4-6 hours before serving.
This will keep (covered) in the fridge for 3 days.
