Easy no bake cheesecake

This is a quick and easy cheesecake to make that can be made up to 2 days ahead or even further ahead and frozen.

It requires very little effort but with an impressive light texture, you will be able to impress your friends and family.

Give this a go; you won't be disappointed.

To make this, you will need:

• 150g/5.3oz biscuits
• 50g/1.7g approx butter or margarine
• 300ml/11fl oz double cream
• 90g/3oz caster (superfine) sugar
• 300g/10.5 oz cream cheese

Remember - keep covered in the fridge for 2-3 days or in an air tight container in the freezer for up to a month (defrost in the fridge for 3-4 hours)
